Dates Crumble Bars for winter ❄️

Yayy , It’s finally November! I love fall , winter.. basically anything to do with good weather in the middle east. We do not have the typical apple picking or leaves changing colour  sort of feel here but the weather does get really pleasant and chilly. Over the weeks , it has become considerably colder and the skies are turning gloomy much quicker. It is such a relief from the summers in Dubai which can get quite unbearable.

I have never experienced proper fall season until we visited Switzerland in September. It was absolutely magical. I love the cold ! So to welcome my favourite season of the year, I’m going to do a fall and winter inspired series on the blog. I’ll be posting a variety of recipes , DIY stuff and some other ideas I’ve got planned!

If you’re tired of only seeing recipes that have got something to do with pumpkins or apples then this is for you !  Since the beginning of fall  , I’ve only come across  recipes with  pumpkins and apples as the main component. Honestly , I do not like pumpkins at all, maybe that’s why I wanted to switch things .I know you guys would have seen recipes for  apple crumble bars but this one is a little different. The main ingredient in this crumble bar are dates. Though this is  not what you would preferably make in the fall , these give you the same warm feeling inside. They are also perfect for snacking on. To make it a little guilt free , I’ve only used half a stick of butter and rolled oats as the other main ingredient. I hope you like it , just as much as I did!

You will need:

For the dates paste:

1 1/2 cup fresh dates , chopped (you can add more if you love dates)

1 tsp vanilla extract

1 cup Water

For the crumbs :

100 grams butter diced , room temperature

1 cup all purpose flour

1 1/2 cup rolled oats

1 1/2 tsps cinnamon powder ( you can add less or more)

1/2 baking soda

A pinch of salt

Pictorial :

Preheat oven. Boil the water and add the dates to it. Stir until it becomes a thick paste. Turn off the heat and add the vanilla extract. You can add more water if required but be careful as you do not want a syrupy texture. It needs to be thick. Also be careful to not burn off the dates.

Beat the diced butter nicely.

Add the packed brown sugar to the butter and beat it until well incorporated.

Add the oats , flour, salt  and the baking soda and mix nicely.

I also added 1/2 cup of honey to give it a really unique taste.

You should get a really nice crumbly mixture as in the picture above.

To assemble your crumble bar , grease your pan thouroughly and make a layer of the crumble mixture first. Divide the crumble mixture equally.

Once you are done with the crumble layer , add the dates paste on top to create a layer. Then once again add the remaining of the crumble mixture on top.

I mixed some oats with honey to create a crunchy layer on the top. Plus it also looks really nice.

Thats all. Quick and easy ! Bake it for 20 -25 mins at 180 degree celsius until golden.

Enjoy the crumble bars with some hot choco! Perfect combination for a cozy evening. You can also try these with various other fillings instead of the dates. If you do try this recipe, pls let me know in the comments below.
