Ginger Bread Man Cookies with no Molasses

We’ve all heard of the fairy-tale gingerbread man who escapes from countless pursuers and eventually met his demise in the jaws of a fox but the real gingerbread man dates way back in the 15th century when figurative biscuit making was practiced. It was made in the court of Elizabeth I of England in the likeness of some of her most important guests.

When I think of gingerbread man, it’s always the cute one from the movie Shrek. Every time I take a chomp of a cookie, I can almost hear him going “not the buttons…Not the gum drop buttons” Hilarious! For this recipe, you will not need  molasses. The cookies itself is moist and chewy. Perfect with a cup of warm milk.Also these cookies are perfect for gifting! Who doesn’t like food as gifts …..

Most recipes for ginger bread are made with molasses and good molasses are not easy to find. So i came up with this recipe , substituting molasses with honey. It turned out perfect ! Hope it turns out perfect for you as well. Happy Baking. 


MAKES: 60 cookies ( You can halve the recipe)



  • 4 & 1/2 cups all purpose flour
  • 1 tablespoon & 2 tsps ginger powder
  • 3 tablespoon unsweetened cocoa powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp baking soda
  • 1 tsp salt
  • 200 grams butter 
  • 3/4 cup firmly packed brown sugar
  • 1 large egg, at room temp
  • 1 cup honey of your choice
  • Vanilla extract


Mix all the dry ingredients and set aside. Preheat the oven at 180 degrees and cream the butter , sugar and egg The butter needs to be slightly cold and should not melt with your touch. Add 1 tsp of vanilla essence.

Add the dry ingredients to the butter mixture. Incorporate well until you get a nice firm dough. The dough should not be sticky. If it is slightly sticky , sprinkle on some flour. Refrigerate the dough for an hour if it is too soft. 

Roll out one small portion at a time to a medium thickness and using a cookie cutter , cut out your cookies. I used a bear cookie cutter and then cut off the ears… ouch. The thicker the cookie , the chewier it is. If it is too flat , the cookie will be hard. 

Once you’ve cut out your cookies , place them on a greased cookie tray and bake them in the oven for 8-10 mins. Don’t leave them in for too long. 

Once you start getting that wonderful gingery smell, you will know its time to take your cookies out ! Smells beautiful ! The cookies will be soft so do not lift them from the tray as they may break. While they are still hot , i sprinkled some icing sugar. You can decorate them with some royal icing too. 

And thats it ! Your cookies are ready, dunk them in some warm milk and enjoy !
