I’ve been in the UAE since I was six. I remember the first time I set foot on this land, I was so excited but I had no idea that I would become so attached to this place ! Though Im originally from India , I will always consider UAE my home. Ever since I was little , the national day is a celebration that brings my entire family together. We live in different parts of UAE but for every national day we make sure we are all together. Driving until late around Jumeirah , getting silly string sprayed and snow spraying other cars are traditions of the national day celebration ! Wouldn’t miss out on all of that fun ever. For me its a family holiday- celebration of unity!
Driving to Jumeirah is our family tradition during the national day holidays. And Jumeirah is place to one of our favorite shawarma stalls. We don’t go to Jumeirah and come back without having shawarma. Also All around the city – thousands of Shawarma are being made and enjoyed. It is the favorite snack food of the country.I do not know where shawarma originated from but every time I think of shawarma, it is associated with the UAE. And I chose pizza as there’s probably not a single person on earth who would dislike it! And as its an event that celebrates the unity of the country and brings people together no matter the differences , what is better than sitting around talking while having pizza to do that.
RECIPE: CHARGRILLED CHICKEN & GARLIC PIZZA
FOR THE NO FAIL PIZZA DOUGH:
Preparation time : 20 mins
Makes: 4 thin crust pizzas and 3 thick crust
- 5 cups of all purpose flour
- 1 tablespoon salt ( sea salt is best)
- 4 tablespoon olive oil or canola oil
- 1 tablespoon yeast (11 grams)
- 2 cups of warm water
- 1 tablespoon sugar
FOR THE CHAR GRILLED CHICKEN MARINADE :
- 1/2 Kg Chicken breasts
- 3 tsps chilli powder
- Salt to taste
- 1 tablespoon lemon juice
- 1/4 tsp chilli flakes
- 1/2 tsp garlic powder
- Red food colouring (optional)
FOR THE PIZZA TOPPINGS :
- Mushrooms – one box
- Garlic paste
- Garlic powder
- Chilli flakes
- Grated Parmesan
- Sliced onion – 1 medium sized onions
Mix the dry ingredients for the dough. Add the sugar and yeast to the water and let it rest for 5 mins. Preheat oven at 180 degree celsius.
Add the wet ingredients to the mix and beat it nicely. Use the dough hook if you have a stand mixer. The more the dough gets worked , the softer your crust. Set it aside covered in an oiled container for at least 10 mins so it can rise nicely.
Marinate the chicken and let it rest for 20 mins. You can so this before you make your dough. I cut the chicken into small pieces so there is more surface area covered in marinade. You can marinate it a day before also and keep. More time of marinate means more intense the flavour.
Spray the grill with some olive oil. This ensures a really nice grilled surface on the chicken. I used the chilli flavoured olive oil.
Once the grill is hot , grill your chicken until you get those nice char marks. Believe me , it gives a really nice smoky taste to the chicken. Do not overcrowd as that would lead to the chicken being steamed and not grilled.
Once the toppings for the pizza is ready. Roll out your dough. Doesn’t matter if it ain’t perfect . Dock the dough. This helps it to rise and cook evenly.
Slather a thick layer of garlic paste on the dough.
Add the toppings to the pizza. I did it in this order : garlic paste , garlic powder , chilli flakes, mushrooms, onion, mozzarella, parmesan , chicken, jalapeños, garlic powder , mozzarella. I also added some dried oregano on top. The amount you want to add is totally upto you.
Bake it for 20-25 mins until the cheese completely melts.
Serve it hot hot ! Hope your family enjoys it as much as mine do !
